Batch Cook Chipotle

Everything you need to get your Gainz on for Tough Mudder. Wholegrain rice and spinach for iron and grilled chicken. Tasty, little prep time and cheap; this is perfect for students and and anyone looking to change up their diet.

  • 1 cup Frozen Mixed Veg

  • ½ Can/ Tin Kidney Beans

  • 2 cup Brown Basmati Rice

  • 1 tsp Chilli Powder

  • ½ Veg Stock Cube

  • 2 tsp Chipotle Paste

  • 5 Chicken Breasts

Prep Your Rice!

Start by washing your rice and adding to a pan. Cover with 3 cups of cold water and boil. When it starts to boil, add in your stock cube, chilli powder, and veg with enough kettle boiled water to cover. Turn down to a simmer and cook for 12-15 minutes.

 

Prep Your Chicken!

Butterfly your chicken and add to a bowl with your chipotle paste. Marinate for 20 minutes before adding to a baking tray and bake for 15 minutes. Finish under a broiler/ grill for 5 minutes each side.

 

Serve!

Finish with a handful of spinach and maybe a drizzle of Siracha. Serve in Tupperware to be eaten anywhere on the go. Be sure to like this recipe, and let us know what you'd like to see next
