Satay Chickpea Pittas


This is kind of a special recipe for me, as this is the first recipe I’ve done in a long time that is connected to the full blown launch of my YouTube Channel!This was out of a challenge to make a meal to a brief with some random factors thrown in. Get on it!

  • 1 tbsp Red Curry Paste

  • 1 tbsp Soy Sauce

  • 2 Cans Chickpeas

  • 2 Handfuls Spinach

  • 1 Red Pepper (Sliced into Julienne)

  • 1 tbsp Peanut Butter

  • 2 Carrots (Peeled and Grated)

  • 6 Wholemeal Pitta Breads

  • 1 Spring Onion (Diced)


Step 1

Prep!

Start by prepping your veg. Add your grated Carrot and Chickpeas to a pan with a shot of Oil over a high heat. Season with Salt and Pepper and sweat off for about 5 minutes. Then add your Curry Paste, Soy Sauce, and Peanut Butter, mixing throughly to get a consistency similar to Refried Beans.


Step 2

Bake!

Add your Bread to a tray and bake at Gas Mark 3/ 135 degrees Celsius for 5 minutes.



Step 3

Serve!

Half and open up your Pitta Breads. Add your Spinach, Red Pepper, Chickpeas, and Spring Onion, and job done. Recipe couldn’t be any easier. Give it a go, watch the Vid, Subscribe to the Channel and let me know how you get on!
